Ingredients:
1 large onion, thinly sliced.
1 tablespoon of olive oil.
1/3 cup of walnuts, coarsely chopped.
1 teaspoon of sugar.
1 tablespoon of Dijon mustard.
16 quarter-inch slices of French bread.
½ cup of grated Parmesan cheese.
Directions:
In a skillet, cook the onion in hot olive oil for about 3 minutes or
until just tender.
Add the chopped walnuts and sugar.
Cook and stir about 5 minutes or until the onion is slightly caramelized
and walnuts are lightly toasted.
Stir in the Dijon mustard.
Spoon the onion mixture on top each of the bread slices.
Sprinkle with the Parmesan cheese.
To serve, place bread slices, onion side up, directly over medium-hot
coals for about 2 minutes or just until the bottoms are toasted and
slices are heated through.
