Ingredients:
3 red onions, halved.
Rind of one lemon, cut into strips.
¼ cup of olive oil.
½ cup of raisins.
¼ cup of Port wine.
2 tablespoons of cider vinegar.
½ tablespoon of packed brown sugar.
Pepper, to taste.
Directions:
In a large saucepan, cover onions and lemon rind with water; then bring
to boil and boil for 5 minutes.
Drain, then rinse under cold running water and drain again.
Discard the lemon rind.
Peel the onions and arrange in a 13-inch by 9-inch casserole.
Pour the olive oil over the onions.
Bake, uncovered, at 375°F (190°C), basting occasionally, for
about 40 minutes.
Add the raisins, Port, cider vinegar, sugar, and pepper to taste.
Bake for another 30 minutes or until juices are syrupy.
