Ingredients:
3 tablespoons of butter.
1 tablespoon of vegetable oil.
1 lb of onions, sliced 1/8 inch thick.
2 ½ lb of unpeeled apples.
½ cup of raisins.
½ cup of cider vinegar.
1 teaspoon of freshly ground black pepper.
1 ½ teaspoon of salt.
2 tablespoons of granulated sugar.
Directions:
Melt the butter in large skillet or medium pot with the vegetable oil.
Once hot, add the sliced onions and sauté over high heat for
about 6 minutes until onions are lightly browned, wilted and almost
cooked.
While the onions are cooking, slice the apples in half, core them,
then cut them into 1/8 inch thick slices. Do not peel the apples.
Add the apples, raisins, cider vinegar, black pepper, salt and sugar
and cook, covered, for 10 minutes, tossing occasionally. If a lot of
liquid is remaining at the bottom of the pot, uncover and cook for about
2 minutes over high heat to reduce the liquid.
